Apple Butter Lemon Miso Dressing

My niece Juliet wanted to incorporate apple butter into our meal with bok choy, mushrooms and avocado sweet potato nori rolls. She helped create this dressing that goes great with fresh salad greens, on rice, or as a dipping sauce.
- 2 heaping tbsp white miso
- 2 heaping tbsp apple butter
- 1/4 cup water (or more if you would like it more viscous)
- juice from 1/2 a fresh lemon
- drizzle of sesame oil
- drizzle of soy sauce if desired
Whisk together with a fork until the miso and apple butter are fully combined and the mixture is smooth
