Gluten-free Vegan Pancakes You can Make in Thailand

Gluten-free Vegan Thai pancake

Thai “roti” pancakes are everywhere! But unfortunately I have never found a gluten-free street pancake in Thailand, and I bet the regular street pancakes also have eggs in them. So I went to the local stores around me in Thailand and found these ingredients easily. Here’s how to make delicious gluten-free vegan pancakes in Thailand:

Makes 2 big GF pancakes (double the recipe to make 4)

  • 1 cup ground peanuts
  • 1 cup tapioca starch
  • 1/2 cup corn flour
  • 1 Tbsp sugar (can be palm sugar, coconut sugar, raw cane sugar, white sugar, whatevs)
  • 1 Tbsp salt
  • 2 Tbsps vinegar (can be rice vinegar, mirin, apple cider vinegar, or a combination of vinegars)
  • 1 Tbsp coconut oil (other kinds of oil are fine too)
  • 1 cup of drinking water
  • Want to make it sweet? Add some chopped fruit like mango and/or banana
  • Want to make it savory? Add a cup of shredded quick-cooking greens like “pahk kah nah”. Add shredded sweet Thai basil and thinly sliced tomatoes!

Mix it all together, coat a frying pan with oil, pour in enough batter to make one pancake, cook it until brown on the bottom, flip it, and cook the other side until browned.
