Sweet and Sour Rainbow Fried Rice

Inspired by the “Jay” vegan restaurants in Thailand, this fried rice pops with colors from corn, red peppers, peas, red cabbage and cherry tomatoes. Chopping all vegetables to the size of a pea makes this dish a speckled rainbow. Mirin makes is sweet and a squeeze of fresh lime makes it sour. So delicious.
Prep and cooking time 20 min (not counting cooking the rice). Makes 2 servings.
- 2 cups of cooked brown rice
- half an onion diced
- 1 clove of garlic diced
- 1 tsp vegetable oil (or 1 Tbsp vegetable broth)
- 1 cup of a mix of diced colorful vegetables (red peppers, red cabbage, cherry tomatoes, etc)
- 1/4 cups of raisins
- A sprinkle of frozen peas and corn
- optional: 2 vegan hot dogs diced the size of corn (highly processed occasional treat 🙂
- 1 tsp gluten-free soy sauce
- 1 tsp mirin
- 1 tsp rice vinegar
- slices of lime to squeeze on top
- dried or fresh chilies to taste
- slices of fresh orange on the side for more color
If cooking with oil:
- Heat the oil on a low flame in a frying pan, wok or wide shallow pot
- Add the onions and garlic and fry for 3-5 minutes. Stir a couple times
- Add the chopped vegetables and fry for 3-5 minutes. Stir a couple times
- Add the raisins and frozen vegetables (and vegan hot dogs if you’re including them) and fry for 3-5 minutes. Stir a couple times
- Add soy sauce and vinegars to the bottom of the pan so the sauces mix together beneath the vegetables
- Stir in the rice and heat until warm
If cooking without oil:
- Heat the vegetable broth on a low flame in a nonstick frying pan, wok or wide shallow pot
- Add the onions and fry for 3-5 minutes. Stir a couple times
- Add the garlic and chopped vegetables and fry for 3-5 minutes. Stir a couple times
- Add the raisins and frozen vegetables (and vegan hot dogs if you want) and fry for 3-5 minutes. Stir a couple times
- Add soy sauce and vinegars to the bottom of the pan so the sauces mix together beneath the vegetables
- Stir in the rice and heat until warm
Pack the fried rice into a small bowl that will make the rice a pretty shape on your plate. It’s like playing in the sandbox. Pack the bowl and turn it over on your plate. Sprinkle chilies on top for some spice and squeeze on the lime.
