Sweet Corn and Mango Chickpea Salad


Sink your teeth into this fresh sweet salad any time of day. Red onions give it a kick and chopped green beans give it crunch. Yum yum yum.

Serves: 4

  • 2 fresh limes (just the juice)
  • 1 tsp agave
  • sea salt to taste
  • 1 ripe mango peeled and chopped (peaches work great if you don’t have a mango)
  • 3-4 ears of cooked sweet corn with the kernels cut off
  • 1/4 of a red onion, finely diced
  • 1/4 cup of diced raw string beans
  • 1/4 cup of cooked chick peas
  • 1/2 a sweet bell pepper
  • 1 whole tomato chopped
  • 1/4 cup of fresh cilantro chopped


  1. Combine the lime juice, agave and sea salt in a separate container
  2. Combine all of the vegetables and fruit in a bowl
  3. Combine all ingredients and serve immediately
