Sweet Corn and Mango Chickpea Salad
Sink your teeth into this fresh sweet salad any time of day. Red onions give it a kick and chopped green beans give it crunch. Yum yum yum.
Serves: 4

Ingredients:
- 2 fresh limes (just the juice)
- 1 tsp agave
- sea salt to taste
- 1 ripe mango peeled and chopped (peaches work great if you don’t have a mango)
- 3-4 ears of cooked sweet corn with the kernels cut off
- 1/4 of a red onion, finely diced
- 1/4 cup of diced raw string beans
- 1/4 cup of cooked chick peas
- 1/2 a sweet bell pepper
- 1 whole tomato chopped
- 1/4 cup of fresh cilantro chopped
Artistry:
- Combine the lime juice, agave and sea salt in a separate container
- Combine all of the vegetables and fruit in a bowl
- Combine all ingredients and serve immediately
