5 Minute Vegan Pizza with Avocado Sauce

Got a tortilla? Then you’ve got a pizza crust. This fabulous recipe is zippy and unique, full of protein, and it makes a great quick lunch. This was inspired by our guest house in Lake Toba, Sumatra Indonesia.

Ingredients:

  • 1 whole wheat tortilla or pita
  • 1 ripe avocado smashed
  • 1 clove of garlic
  • Juice from 1 lime
  • A dash of sea salt
  • 1/8 cup of diced red cabbage
  • 1/8 cup of shredded carrot
  • 5 chopped green beans
  • A sprinkle of roasted chopped peanuts

 

  1. Combine avocado, garlic, lime and sea salt
  2. Spread avocado mixture on the tortilla
  3. Sprinkle on the cabbage, green beans and peanuts
  4. Heat it up if you like
