Banana Rice Breakfast
Coating brown rice with sweet banana makes it sticky and wonderful. Sprinkle nuts and seeds on top and you have a hearty and delicious whole food vegan breakfast ready in minutes.
1 serving:
- 1/2 – 1 banana mashed
- 1 cup of cooked brown rice (hot or cold)
- Nuts and seeds (pumpkin seeds add a lovely contrast, ground flax seeds, sesame seeds, almonds, cashews, etc)
- Mix the rice and mashed banana until the rice is coated
- Sprinkle nuts and seeds on top
This is a super toddler friendly breakfast. It sticks to the spoon and kids love it. When I cook rice, I leave it out over night so that we can make it into banana rice for breakfast.
