Banana Rice Breakfast

Coating brown rice with sweet banana makes it sticky and wonderful. Sprinkle nuts and seeds on top and you have a hearty and delicious whole food vegan breakfast ready in minutes.

1 serving:

  • 1/2 – 1 banana mashed
  • 1 cup of cooked brown rice (hot or cold)
  • Nuts and seeds (pumpkin seeds add a lovely contrast, ground flax seeds, sesame seeds, almonds, cashews, etc)
  1. Mix the rice and mashed banana until the rice is coated
  2. Sprinkle nuts and seeds on top

This is a super toddler friendly breakfast. It sticks to the spoon and kids love it. When I cook rice, I leave it out over night so that we can make it into banana rice for breakfast.
