Gluten-free Fava Bean Falfel / Veggie Burger Deliciousness

Large fava beans are so big and fun! But sometimes the outside shell of a fava bean is too firm to enjoy it. Blend these big satisfying beans up and turn them into healthy falafel or even mini veggie burgers you can put into sandwiches, on salad, or on top of your pasta or rice. This is great healthy finger food for kids!

Makes about 17 patties that are 2 inches wide when flattened

  • 16 oz large or small fava beans cooked and drained
  • 2 Tbsp of chopped raw green onions or nira grass or diced red onions
  • 2 cloves of raw garlic – 1 clove raw garlic
  • 1 tsp agave – 1 Tbsp agave
  • 1 tsp fresh lemon juice
  • 2 Tbsp raw or roasted pumpkin seeds
  • 2 Tbsp nutritional yeast
  • 2 Tbsp ground flax
  • 1 tsp sea salt
  • 1/4 cup cassava flour

In a food processor combine the beans, onions, garlic, agave and lemon juice. Then add the rest of the ingredients one by one until you can make a golf-ball size ball out of the mix. Make these balls and flatten them and grill or fry each until golden brown on both sides. Use a non stick pan or coat the pan with oil before frying.

Blend these ingredients together if you have them for a delicious topping: baked potato, garlic, fresh lemon juice, cooked greens (collards, broccoli, etc) and tahini

And serve with yummy balls of quinoa and millet!

 

Millet and quinoa mix:

1 cup millet

1 cup quinoa

7 cups water

Rinse and drain the millet and quinoa

Add 7 cups of water and bring to a rolling boil

Turn heat down low and cook lidded for 20 minutes

Keep the lid on for 5 more minutes after turning off the heat so the grains can steam
